A dish to be enjoyed three ways
The concept of this dish is “Hiroshima-centric cuisine.”
It combines a wide variety of local produce, including Hiroshima-grown Koshihikari rice, whitebait from Kure, pickled regional vegetables, and Japan’s top-selling lemons grown the area.
The dish can be enjoyed in a variety of ways, eaten just as it is, or rolled by hand into tasty seaweed parcels, or served as ochazuke with lemon-flavored broth and wasabi poured over the rice. Enjoy three unique and delicious tastes with one dish.
Steamed Setouchi whitebait straight from the pot
The steamed whitebait served in this dish are caught in the Seto Inland Sea. These fish are naturally rich in flavor and contain a generous helping of calcium! We recommend enjoying them with steamed rice or okayu rice congee.
Hiroshima Akitsu Potato Croquette
The potatoes grew in a mild climate environment receiving plenty of sea breeze from Setouchi. It was also planted in a unique red brick color soil, filled with minerals. The quality of starch is very high, resulting with a delicious taste.
It was originally a local cuisine made only from Japanese sake served to brewers working at Higashi Hiroshima City Saijo Cho. We arranged it with dried sardine soup made in Setouchi, so that children and people who are not good with alcohol can enjoy it as well.
